Quick Tzatziki Sauce

Quick tzatziki sauce is creamy and full of bright summer flavors. This is a versatile sauce that can be used as a dip for veggies, chicken strips/kabobs, breads, lamb kabobs, on a gyro or as a fun condiment.

Most recipes shred the cucumbers and, I know that is the traditional way to make a Tzatziki sauce but, we have found chopping the cucumber in a food processor (or by hand) is a much faster and, I might add, easier way to make the sauce. Plus, for us, we like the small chunks of cucumber. . .so good!!!!

How do you make a Quick Tzatziki Sauce

Chop the cucumber by hand or in a food processor. Sprinkle on some salt. Let it stand for a few minutes. Then squeeze the cucumber with a CLEAN kitchen towel (haha) or paper towel.

Add the Greek yogurt (we use non fat to save a few calories), lemon juice, garlic, olive oil, fresh dill, salt and pepper to the chopped, towel dried cucumbers. Gently stir together until mixed well. Taste!! Then add more salt and pepper if needed.

This tangy cool sauce is great on pita bread or crackers, chips, and cut veggies. We love to serve it with grilled meats, especially in the summer! There's something about the refreshing sauce paired with that grill flavor that makes it irresistible! Of course, this quick tzatziki sauce can also be served alongside gyros for a fun "make your own" meal night. Just set out some grilled lamb or chicken, cucumber strips, diced tomato, onion, feta cheese, and pita. Everyone can build their own gyro and add all the tzatziki sauce they like.

Ingredients

  • 1 Large Cucumber
  • 1 teaspoon Salt
  • 1 1/2 Cups Fat Free Plain Greek Yogurt
  • 1 Lemon Juiced
  • 2 Cloves Garlic Minced
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Fresh Dill Chopped
  • Salt and Pepper to Taste

Instructions

  • Chop cucumber
    1 Large Cucumber
  • Add 1 teaspoon of salt to the chopped cucumber and stir to coat

  • Remove and excess moisture from the cucumber. Using a clean kitchen towel, or paper towel, place the cucumber in the towel and squeeze the cucumber to drain the excess liquid. Discard the liquid.

  • Place the drained cucumber in a bowl.

  • Add the Greek yogurt, lemon juice, minced garlic, olive oil, and chopped dill to the cucumber. Mix all the ingredients well. Add salt and pepper to taste. Start with 1/8 a teaspoon at a time until it has the flavor you like. (Remember, you can always add more seasoning... you can't take it out!!!  It's better to start with less, taste and add more if needed.)
    Cover and refrigerate until ready to serve.
